I know themes are horribly hard to choose :disappointed: and for your title, you go to your blog (not dashbord) and you'll see in the top right cornor of your screen "costomize" click it a bar will appear on the left of the screen and then you'll see "title ...." change untitled to whatever you want and click "save"
