Depends on what context you use it in. If you are saying what is your favourite colour than you say what. But you could say which of these colours is your favourite.

briggins is right, if you are given a few option then they should say wich [one of these], but if they're asking in general ,then 'what' is the right way

You can say both "what color" and "which color" but "which color" is better grammar.
