ok this is weird but i had to do it when i transferred songs to get it to sync. when you plug your ipod in does itunes recognize it in the panel to the left? if it does click on that and go to the music tab i think. the "all songs bubble" should be filled in. click on the bubble below it and then click "all music or songs" again. then in the bottom right click apply. when i did that it synced all my songs.

have you tryed putting your ipod into disk mode? that way windows should recognize the disk.
