I'm planning on going to the Charlotte, NC show, which has not gone on sale yet. When does Ticketmaster usually release the seating chart for Coldplay specifically so I can know when I'm buying during presale whether my seats are good or not?

Sometimes they don't post the specific one for the venue at all...

 

I presume you are referring to the floor seats, as generally the others are fixed and don't change. As a general rule of thumb, anything rows 1 - 30 should be pretty decent as the X stage is around row 20 or so for most of the venues floor plans so far.
