Here's my mom's recipe that I've always used. It turns out great, but has a slight tendency to boil over so be careful. I wrote it up assuming you know how to make pie crust.

Butter Tarts

 

Crust:

 

2 cups flour

1 tsp. salt

3/4 cup shortening

5 or 6 Tbsp. cold water

 

Filling:

 

1/3 cup butter

1/2 cup corn syrup

1/2 cup brown sugar

2/3 cup raisins (sort of optional- you'll be a little short on filling. Or you can substitute nuts like pecans or walnuts)

1/2 tsp. vanilla

1/4 tsp. salt

1 egg

 

Prepare pastry dough. Roll out and cut in circles with round cookie cutter. (about 3 3/4 in.) Line 14 muffin cups (3in at top) with pastry circles. (poke the bottoms with a fork to keep them from getting bubbles when they bake)

 

Melt butter and stir in corn syrup, brown sugar, raisins, vanilla, and salt. Beat egg slightly and add. Mix well.

 

Spoon mixture into pastry-lined cups filling each about 2/3 full.

Bake at 425F for about 20 minutes until crust is golden. Reduce time if making smaller tarts.
