How do you turn part of a picture to greyscale and not the rest?

I'd like to know as part of my photography for my art course

 

I edit it in photoshop. I use the Hue/Saturation tool, and desaturate all the colours except red. If I need to do touchups I'll go through the image desaturating parts as need be. :)
