I'd say Green Eyes. I used to hate the song, now I love it, great love song.

Parachutes - Spies. Awesome song. Great bass and drums and awesome atmosphere.

A Rush of Blood - A Rush of Blood to the Head. Amazing. I love the lyrics and the guitar. It's great and horribly under-estimated.

X&Y - X&Y. I think this is possibly one of the most daring songs Coldplay has done. It's very kind of dreamy with great guitar and drums and strings. I just love it.

I Bloom Blaum isn't talked about enough. Great guitar part.

Parachutes. It's short, so it's overlooked. But I think it's lovely. It puts me in the BEST mood.

But for a "real" song...I'd have to say High Speed or We Never Change. Parachutes is still my fave record...
