That's why it's possible not to trust them anymore.

What I don't get is why the person the cheater is cheating with is willing to take the chance.

If you know that a person will most probably leave you one day, why bother at the first place?

I wouldn't let this happen if I know that they are in a relationship.

 

People can be unhappy in their relationship or fall in love with someone else but they should end their relationship if that's the case. I wouldn't trust someone if I knew that they cheated on their ex-partner.
