..That, and I was thinking about the time when the Brits gave that presentation in St. Paul / Minneapolis on trying to grow wheat that makes better proteins so the bread rises better. Here I look at an example of the gist (or grist) of it - one pan has beautifully risen whole wheat dough in it, the other buckwheat dough, which is about half the level risen..

maybe if I give the buckwheat a little more time? hm..
