I think your true "handed-ness" (yes, I know that'a not really a word) is determined by what hand you write with. Most lefties probably use their right for some things either because they were taught by right-handers or because of the equipment they're given. I use right-handed scissors but would never call myself ambidextrous because I can't write with my right hand.
