Yes, I do say y'all when speaking. It makes more sense than "you guys" because that's not gender-neutral, and it's simpler to say than "you all". Also, just saying "you" could indicate the singular, which might be confusing if you're talking to a group.

No, I don't think so highly of anyone as to call them "sir", but I do sometimes use "Ma'am" if it's a nice old lady. If you really want I'll record my voice and put it on here. :P
