"Spanish food is not famous in America like Italian food," she says. "We tried to show the ethos of how the Spanish eat and live. There's so much soul that goes into food there." Paltrow has been a devotee of Spanish food and culture since she studied in Spain at 15. Web Exclusive Where do you get your recipes? I love getting cookbooks—people will give them to me, and I read them like novels and file everything away. I really like cooking according to the season. I like to get creative with what's fresh. On the Spain trip, we did a take on Iron Chef with local ingredients. It was fun to have the challenge of cooking with the seasons, because you'll have the same ingredient over and over and you want to make it creative each time. What does your family eat at home? My kids started off healthy. They love brown rice, tofu, veggies, boiled eggs. They eat fish. I really like Jessica Seinfeld's book ["Deceptively Delicious"], and I like hiding puree in cake and putting flax meal in pancakes. I try to make things as healthy as possible. What type of restaurants do you like? When I venture out to eat, I like to go to places with food that I don't know how to make. So my favorites are Japanese and Indian. Indian food has so much layering of flavor, and the dishes go together so harmoniously. Why do you think you feel such a strong connection to Spain? The warmth of the people. When I was there at 15, it was like a coming-of-age. I was still so innocent, and I had more freedom there than in New York because it was so safe. So it was going to the disco for the first time, sneaking a cigarette. It was the first time I had a sweet, innocent taste of a wider world. It was in the backdrop of this ancient setting that you don't see in the United States, so it was a special time in my life. Is there anywhere in Spain you'd especially like to revisit? I want to go back to all of it! From the Magazine How did you first get involved with the show? At a dinner with Mario, he told me he was going on a road trip through Spain. I have a long relationship there because I went as an exchange student in high school. I'm still really close with my Spanish host family, and I've been going back ever since. So I said, "I want to go with you!" What kind of meals did you have on the trip? Near Galicia, we went digging for clams on the beach. They were small ones and later prepared with garlic and a white Sherry by local women. When we were in Valencia, We had a seafood paella in the middle of a rice field. It was absolutely unbelievable. What are your favorite Spanish foods? Paella. My Spanish host mother makes it from scratch over a real fire. The anchovies and tuna are the best in the world in Spain. I brought back tons of those, and wine, olive oil, Majorcan sea salt with hibiscus, and rice from Valencia. What do you cook at home? After I had the kids, I took a break from work, and all my creativity went into my kitchen. I like experimenting. Anchovy is a good secret ingredient to work with. I put it in tomato sauces; it adds depth to them. When I have all the ingredients, I make a delicious spicy fish stew. On a cold night, it's wonderful. Any favorite kitchen gadgets? I've got a Gaggenau steamer and deep-fat fryer. I love them. I use the steamer at least twice a day to steam vegetables for the kids. The deep-fat fryer is great for french fries, fried zucchini, and clams. What ingredients do you like? I love bitter winter greens, radicchio, escarole. I have an amazing vegetable garden, and I'll walk through it and smell all the aromas. I get excited at farmers' markets. What's the best snack?
